It took Mina Ibanez three years to bring her dream of an upscale Mexican restaurant to fruition, but the Mexico native is reaping the rewards of her hard work at Los Chilaquiles.

“I’m surprised to be as busy, only having been open five months,” she said. “It took me three years at the other restaurant [to achieve this success].”

Ibanez has been in the restaurant business for 10 years and worked at a Mexican restaurant in Georgetown before deciding to branch out on her own. She opened Los Chilaquiles the last week of 2010. Her goal was to bring an upscale restaurant with good service and good food to Cedar Park. To ensure quality, she opens and closes the restaurant and has a hand in nearly every aspect.

“I’m always back there in the kitchen, helping the cooks,” she said.
